The Challenge of Going Vegan

  1. The notion of an "acquired" taste isn't just a semantic construction. An appreciation for new foods CAN be developed by CHOOSING to eat them a dozen or so times. (This really is a physiological process).

    Once people learn about excellent nutrition -- and a high-nutrient unrefined plant-centered diet (e.g. a "nutritarian" eating style) -- their new knowledge can motivate them to deliberately choose to develop new tastes. The nuanced natural flavors of vegetables and whole fruits, beans, raw nuts and seeds start becoming very enjoyable once you get off all the sugars and oily and salty processed foods.

    Let go of the idea that new foods need to taste like your old foods. Acquire a taste for healthy whole foods. It's time to grow up.
